Vincent Couche makes extraordinary Champagnes that are complex due to his extended aging on the lees - this bottle spent 5 years sur lie. The bead is fine, the fruit focused and the finish dry. Vincent Couche is an extraordinary grower in a region dominated by big brands that offer less-enticing selections. Vincent Couche is part of an incredible movement of small-growers who estate bottle their wines and in Vincent's case, is fully Biodynamic - a rarity in all of the region.
4 g/l dosage. 80% pinot noir & 20% chardonnay, partly fermented in barrels (12%). Base 2012. Beautiful Champagne. 1/2 Solera as of 2014 - Vincent wants a 'souvenir' from the previous vintage. Fine bubbles rise from the deep golden color. The elegant nose combines delicate floral aromas on a nice background of minerality and brioche and dried fruit, smoky edge. In the mouth it is rich, well chiseled with fantastic notes of white and yellow fruits and a long finish. 730 cases produced.
Vincent Couche may be one of the star grower-producers in Champagne, but he doesn't see himself as a winemaker. He says wine comes from the stars, the sun, the soil, the sky, and he's just a caretaker, a guide. For the last 20 years he's been tending his 13 ha in the Côte des Bar with incredible care. He farms biodynamically, uses native yeasts and doesn't add sulfur. The results are nothing less than stellar. The Elegance cuvee is 80% pinot noir, 20% chardonnay, with a mere 2 g/L dosage (he lets the wine tell him how much to add). The pinot brings bright raspberry aromas and a hint of red apple on the palate while the extended lees aging gives it a dense toasty richness. Yet it remains bright, fresh and delicate. elegant. In a word: elegant.

For Cam Davis, LouElla is the culmination of more than 20 years of experience in the hospitality and beverage industry. Cam has successfully managed some of Durham’s finest locally and nationally recognized establishments, including Hutchin's Garage, Guglhupf, Rue Cler, and Durham Catering Company. He brings a wealth of wine and beverage knowledge, not only from his extensive restaurant experience, but also from his tenure as Durham Sales Manager for wine distributor Bordeaux, Fine and Rare.
