Sourced from the 3.7 hectare Sori Paitin parcel on the Serraboella cru, which is south-southwest at 280 to 320 meters in elevation with Calcareous clay with Sandstone soil. Hand-harvested. Practicing organic. Practicing biodynamic. Fermented in stainless steel using the submerged cap (cappello sommerso) method. 40-45 day maceration. Aged for thirty-six months in Slavonian oak.
Paitin has a long running history stretching back to 1796 –a time in Italy when Napoleon Bonaparte is marching on Milan while here at home George Washington is passing the reins to John Adams, Jane Austen writes her first draft of Pride and Prejudice and Robert Burns composes Auld Lange Syne. Meanwhile these boys in Piedmont are busy focusing on wine growing.
In 1796 Benedetto Elia purchases the farmstead with its outlying wine cellar and vineyards from Luigi Pellissero and their story begins. Farther along Benedetto’s son Giuseppe extends the vineyards and acquires the underground cellar, dating back to XV century. As early as 1898 Paitin wines are exported and their Barbaresco del Sori Paitin, a wine we marvel to this day, was first produced in 1893.
Hundreds of years and many generations have unearthed a deep understanding and fine-tuned the family methods both in the vineyard and the winery –ultimately inspiring Secondo Pasquero-Elia to build a new cellar in 1965 and to gradually replant his vineyards to the best clonal selections particular to each and every parcel among their 42 acres under vine.
Today we still find Secondo Pasquero working in this cellar together with his sons Giovanni and Silvano. Since we first imported these directly to Minnesota eight years ago, Paitin has gone from strength to strength and for notable value.

The business takes its name and mission from owner and proprietor Campbell Davis's Great Aunt LouElla who was much beloved for her warmth, hospitality, and generous spirit. For Cam Davis, LouElla is the culmination of more than 20 years of experience in the hospitality and beverage industry. Cam has successfully managed some of Durham’s finest locally and nationally recognized establishments, including Hutchin's Garage, Guglhupf, Rue Cler, and Durham Catering Company. He brings a wealth of wine and beverage knowledge, not only from his extensive restaurant experience, but also from his tenure as Durham Sales Manager for wine distributor Bordeaux, Fine and Rare.
