Bottled during the end of active fermentation, this wine continues to ferment in the bottle leaving it dry, cloudy, yeasty, and full of life, with a natural effervescence. Released just after bottling, it is the fresh wine of the harvest. It is fresh and fruity after bottling, but ages gracefully into more yeasty, toasty aromas. Made from a blend of Cayuga and Seval grapes from Fingerlakes region, New York.
Located 175 miles north of Boston and 150 west of Nova Scotia, Oyster River Winegrowers is a small-scale operation owned by Brian Smith in Warren, Maine. His farm is intentionally low-tech and relies on draft horses and cows to be integral parts of the sustainability cycle in which man, animals, and nature each feed, and are fed, by the next organism in the chain. Smith makes cider from local apples and wine from European Vitis vinifera and American hybrids. Morphos White is a blend of hybrids Cayuga White and Seyval Blanc, both very popular in the cooler parts of the northeast, that is vinified into a naturally sparkling wine through méthode ancestrale using no "acidulation, deacidification, chaptalization, amelioration, tannins, enzymes, or yeast nutrients." We've had plenty of these wines from Europe, but Maine? Never. This is a very exciting addition.

For Cam Davis, LouElla is the culmination of more than 20 years of experience in the hospitality and beverage industry. Cam has successfully managed some of Durham’s finest locally and nationally recognized establishments, including Hutchin's Garage, Guglhupf, Rue Cler, and Durham Catering Company. He brings a wealth of wine and beverage knowledge, not only from his extensive restaurant experience, but also from his tenure as Durham Sales Manager for wine distributor Bordeaux, Fine and Rare.
