Method of fermentation: Hand harvested in small baskets, macerated on the skins for 48-72 hours, spontaneous native yeast fermentation, traditional hand-crank press, aged eight months in large oak barrels, bottled unfiltered w/less than 50mg/l of total sulfur
Giorgio Nicolini is a small family-run farm, based on old traditions inherited from grandparents. Their effort is devoted to regenerating and replanting the old type of native vines, now almost completely lost, using the original centenary clones from their own vineyard.
The two hectares of vines are situated on the hills above the town of Muggia, old venetian colony, in the outskirts of Trieste. In front, the sea of the Gulf of Trieste, on the other side, Slovenia and Croatia borders are steps away. The vines are from 20/30 years old and they grow manly in clay soil with marine sediments.
Those wines, from this particular stripe of land, have a special ‘flavour’ thanks to the natural characteristics of this region, the type of soil, the altitude and the specific climate where the Alpine and Mediterranean air meet.The main white grape here is Malvasia Istriana, introduced into the area by venetian merchants, who brought cuttings from Greece. Followed by Vitovska and Moscato Giallo for white grapes and, Refosco for the reds.
The treatments in the vineyard are kept to minimum, avoiding the use of systemic products. The same approach is kept in their tiny cellar, where the wines are fermented with indigenous yeasts, no filtrations and only a small amount of sulphites is added. The wines are the expression of the place, the history behind and the family who lives inside.

For Cam Davis, LouElla is the culmination of more than 20 years of experience in the hospitality and beverage industry. Cam has successfully managed some of Durham’s finest locally and nationally recognized establishments, including Hutchin's Garage, Guglhupf, Rue Cler, and Durham Catering Company. He brings a wealth of wine and beverage knowledge, not only from his extensive restaurant experience, but also from his tenure as Durham Sales Manager for wine distributor Bordeaux, Fine and Rare.
