Fermentations are by parcel in enameled steel vats with the finished wines left alone on their lees for as long as possible depending on the vintage.
Taste: In the glass a pink hue yields to notes of framboise, rose petal, and hints of orange blossom. Medium-bodied with an almost racy acidity that is balanced by minerality and floral notes on the palate.
Pierre Morin's 9.5 ha of vineyards that surround the commune of Bué, 3 yield low quantities of fruit as the vines go through a spring de-budding & are harvested by hand. The result is a richly aromatic Rosé that shows minerality from the limestone terroir
Pierre Morin harkens back to the past with the certainty that great wine can only be made from low yields and grapes harvested by hand. Pierre practices organic viticulture. Chene Marchand is the richest most fruitful of his parcel-selected cuvées. The Cuvée Ovide is from a parcel of 65 year old vines on "Caillotte," which adjoins the village of Bué. Chant de l'Orme, from 50+ year old vines on a parcel in Lieu dit Les Grands Champs, nearer Sancerre, is partially vinified in older demi-muids. For all wines in all vintages, Morin practices Lutte Raisonée farming of the vines, never using herbicides or chemical fertilizers. In every vintage (with his severe pruning and selection at harvest) Pierre yields on average a meager 40 hl/ha. For us he sets aside his oldest vines from various parcels, including Chene Marchand which makes the richest most intense wine he offers. The Vieilles Vignes cuvée is very ripe, complex and just the paradigm of Sancerre on the nose. On the palate it is concentrated, tight and profound with a perfect mosaic of fruit and mineral tones and an exquisite finish.

For Cam Davis, LouElla is the culmination of more than 20 years of experience in the hospitality and beverage industry. Cam has successfully managed some of Durham’s finest locally and nationally recognized establishments, including Hutchin's Garage, Guglhupf, Rue Cler, and Durham Catering Company. He brings a wealth of wine and beverage knowledge, not only from his extensive restaurant experience, but also from his tenure as Durham Sales Manager for wine distributor Bordeaux, Fine and Rare.
