TASTING NOTES: Blanc de noir color in the glass with small, lively bubbles. Elegant and delicate aromas of white fruits. Well structured, smooth and balanced in the mouth.
IN THE VINEYARD:
REGION: Extremadura.
VINEYARD: 3.3 Has
VARIETALS: Macabeo 38% Xarello 30% Cabernet Sauvignon 30% Cencibel 2%.
FARMING PRACTICES: Certified organic; dry farmed.
PLOUGHING: Grassed over (legumes and native plants). Spring ploughing for composting.
SOILS: A mix of granitic, slate, clay and sand depending on the plot
WEATHER: Continental Weather
VINES: 25 year old vines. Bush & Trellis.
HARVEST: Entirely made by hand in small crates during the night.
IN THE CELLAR:
WINEMAKING: All varietals are co-fermented spontaneously with native yeasts. The first fermentation takes place 21 days in concrete tanks. The second fermentation takes place in the bottle for a minimum of 2 months according to the Method Ancestral.
TREATMENTS: No chaptalization and acidification at all. The idea is to stay natural as much as possible.
PRESSING: The grapes are placed in small concrete tank intact and the is juice extracted by its own weight.
MALOLACTIC: Spontaneous, if any.
AGING: A minimum of 12 months on the lees
FINING/ FILTRATION: The wine is allowed to settle naturally by gravity and is only minimally fined or filtered. Disgorging is done by hand one bottle at a time
SULFITES: ≤20 mg/L.
WINEMAKER: Juan Sojo.
DATA: 11.5% Alc. Below 2 g/l residual sugar
PHILOSOPHY: Low intervention. We believe that the best wines are born in the vineyard.

For Cam Davis, LouElla is the culmination of more than 20 years of experience in the hospitality and beverage industry. Cam has successfully managed some of Durham’s finest locally and nationally recognized establishments, including Hutchin's Garage, Guglhupf, Rue Cler, and Durham Catering Company. He brings a wealth of wine and beverage knowledge, not only from his extensive restaurant experience, but also from his tenure as Durham Sales Manager for wine distributor Bordeaux, Fine and Rare.
