Pissarres is Costers del Priorat’s flagship wine encompassing both the rugged center of Priorat and the region’s warm south. Pissarres is derived from the word “pizarra,” which is “slate” in Spanish. The wine is a blend of organically-farmed grapes from Mas Alsera in Torroja del Priorat (500m) and Sant Martí in Bellmunt (350m). Pissarres is a blend of 65% samsó (carignan) and 35% garnacha from vineyards planted in 1950 and 1979 on red llicorella (decomposed slate), using the traditional bush vine pruning technique. Pissarres is the definition of understated Mediterranean elegance. Wines are made with low intervention and minimal sulfur at bottling.
Vintage – 2017 vintage was the warmest in 20 years and harvested on the 24th of August with near-perfect conditions. Lack of rainfall favored old-vines. Wines are bold, with very low yields, of the highest quality. They are full-bodied but not burnt or overripe due to the exceptional viticulture at Costers del Priorat. The wines exhibit a balanced acidity obtained from the cool nights of their coastal position. 2017 is a top-quality vintage that will reward additional cellar aging.
Vinification – After a manual harvest, the wine is fermented with indigenous yeasts in stainless steel tanks of 3,000 and 5,000L, and a small part in cement vats. The different varieties in the blend are vinified separately to allow each to express itself fully. The aging is carried out for 12 months in French oak barrels of 225 and 500L. Part of the barrels are new, and some are two years old. The malolactic fermentation occurs spontaneously within the barrels.

Cam has successfully managed some of Durham’s finest locally and nationally recognized establishments, including Hutchin's Garage, Guglhupf, Rue Cler, and Durham Catering Company. He brings a wealth of wine and beverage knowledge, not only from his extensive restaurant experience, but also from his tenure as Durham Sales Manager for wine distributor Bordeaux, Fine and Rare.
